Musakhan (Sumac Spiced Chicken) recipe by Chef Ishijyot Surri, Executive Chef – SJI Hospitality and Foods Pvt. Ltd

Ingredients:

  • 1 chicken, cut into pieces
  • 4 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 3 tablespoons sumac
  • 2 teaspoons ground cumin
  • a pinch of saffron
  • Salt and pepper to taste

Method:

  1. Preheat the oven to 375°F (190°C).
  2. Caramelize onions in 2 tbsp olive oil.
  3. Season chicken with saffron, sumac, cumin, salt, and pepper.
  4. Brown chicken in remaining olive oil.
  5. Place chicken in a baking dish, top with caramelized onions.
  6. Bake covered for 30-40 minutes.

Lamb Kofta Kebab recipe by Chef Ishijyot Surri, Executive Chef – SJI Hospitality and Foods Pvt. Ltd

Ingredients:

  • 500g ground lamb
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • Juice from 1/2 lemon
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Olive oil, for brushing

Method:

  1. Mix all ingredients in a bowl.
  2. Shape into kebabs.
  3. Grill for 4-5 minutes each side.
  4. Serve hot with preferred sides.

Ingredients:

  • Whole chicken
  • Whole Spices
  • Basmati Rice
  • Turmeric powder
  • Salt
  • Oil
  • Chicken broth
  • Peas
  • Raisins
  • All spice
  • Bay leaf
  • Green chili
  • Saffron
  • Brown onion
  • Almonds
  • Ground Spices: Black pepper powder, Curry powder, All spice powder, Cinnamon powder, Nutmeg, Biryani spice mixer

Method:

  1. Boil chicken with whole spices until cooked.
  2. Bake cooked chicken in the oven.
  3. Cook rice with turmeric, salt, oil, and broth.
  4. Sauté raisins, almonds, and peas.
  5. Prepare spice mixture and fry with green chili, bay leaf, and onion.
  6. Layer rice, chicken, and sautéed mixture.
  7. Garnish with saffron water.
  8. Let it sit for 10 minutes.
  9. Serve with salad and yogurt.
